In a large oven safe pan , heat the olive oil on medium flame.
When the oil gets heated up put minced garlic. Cook for few minutes
Now add tomato puree in the pan. Add some red chilly flakes, salt and pepper and some balsamic vinegar.
Cook till tomato are almost done.
Stir in cooked quinoa and grilled Chicken pieces in it and cook it for 3-4 minutes.
Add basil and baby spinach. Cook until Spinach leaves has wilted.
Now remove the pan from heat. Top it up with cherry tomatoes, mozarella cheese and parmesan cheese.
Place the pan in preheated oven at 180°C for 5-6 mins or until the cheese has melted and begins to brown.
