Quinoa Caprese

  • 2 cups cooked Quinoa
  • 1 cup Grilled Chicken Breast diced
  • 4-5 Tomatoes pureed
  • 10-12 Cherry Tomatoes halved
  • 2 cups Baby Spinach
  • 1/2 cup Basil chopped
  • 2-3 Garlic clove minced
  • 1/2 cup Mozarella cheese Grated
  • 1/4 cup Parmesan cheese Grated
  • 1 tsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt to taste
  • Black Pepper freshly grounded
  • 1/4 tsp Red Chilli Flakes


  • In a large oven safe pan , heat the olive oil on medium flame.
  • When the oil gets heated up put minced garlic. Cook for few minutes
  • Now add tomato puree in the pan. Add some red chilly flakes, salt and pepper and some balsamic vinegar.
  • Cook till tomato are almost done.
  • Stir in cooked quinoa and grilled Chicken pieces in it and cook it for 3-4 minutes.
  • Add basil and baby spinach. Cook until Spinach leaves has wilted.
  • Now remove the pan from heat. Top it up with cherry tomatoes, mozarella cheese and parmesan cheese.
  • Place the pan in preheated oven at 180°C for 5-6 mins or until the cheese has melted and begins to brown.
  • Serve.
